I love when a healthy salad is one my family actually asks for—and this avocado corn chicken salad is one of those recipes.

It’s colorful, full of fresh ingredients, and has that magic combination of great textures and flavors that keep you coming back for “just one more bite.”

I think the secret is in two things: the way the chicken breast is seasoned, and the flavorful dressing made with zesty lime juice and a hint of Dijon mustard.

This is not your basic chicken salad!

This is a protein-packed salad that feels hearty enough for a main dish, but it also works beautifully as a side dish for a summer cookout or potluck. It’s light, fresh, and full of colorful favorite vegetables—and that creamy avocado makes it irresistible!

The Ingredients That Make It Shine

The base of this salad starts with chicken breasts seasoned with a spice blend that includes paprika, smoked paprika, cumin, chili powder, garlic powder, and onion powder. These simple spices turn plain chicken into yummy bites that stand out in every forkful.

Then comes the sweet pop of fresh corn!

Oh, how I remember my dad bringing in fresh, sweet corn just picked from the field. Nothing better!

You can use sweet corn straight off the cob when it’s in season, or frozen corn if that’s what you have. Either way, it brings natural sweetness and crispness that balance the richness of the avocado.

And speaking of avocado—don’t skip the ripe avocado here. I dice it so there are generous chunks throughout the salad, giving you that creamy texture in every bite.

Fresh dill adds a simple freshness, and a scattering of green onion gives just the right amount of bite.

For a little extra flavor and color, I love adding red bell pepper for crunch, as well as feta cheese for a savory finish.

The Zesty Lime Dressing

The dressing ingredients are simple, but together they make magic!

  • Olive oil for richness
  • White wine vinegar for brightness
  • Lime juice and lemon juice for a citrusy zing
  • A spoonful of honey to balance the tang
  • A touch of Dijon mustard to pull it all together

I whisk these together in a small bowl until emulsified, and the result is a zesty dressing that’s light but full of zip!

How It All Comes Together

I start by cooking the chicken in a skillet over medium-high heat to get that nice golden sear, then finish it in the oven until the internal temperature reaches 165°F.

You can also use shredded chicken or even canned chicken if you’re in a hurry—just make sure to season it well so it has plenty of flavor.

Once the chicken is done, I let it rest before cutting it into bite-sized pieces.

Then it’s time to place chicken in a large bowl along with the diced avocado, fresh corn, red pepper, dill, green onion, and cheese.

Drizzle the dressing over everything and give it a gentle toss in a large serving bowl or mixing bowl.

Be careful not to mash the avocado—you want those creamy chunks intact!

Enjoy!

This chicken avocado corn salad is truly a great salad for any time of year, but it especially shines in the warmer months when fresh produce is at its best.
