Ingredients
  

  • vegatable or canola oil for frying
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 4 eggs
  • 3 tbsp sugar
  • 2 tsp vanilla
  • 6 English muffins
  • 1/2 tsp ground cinnamon (optional)
  • zest of 1/2 orange (optional)
  • powdered sugar
  • pure maple syrup
  • fresh raspberries (for garnish)

Instructions
 

  • In a mixing bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla, and optional cinnamon and/or orange zest.
  • Split the English muffins into halves and shake off any loose crumbs.
  • Place the muffin halves in the custard, cut-side down. Soak for 2–3 minutes, flip, and soak another 2-3 minutes.
  • Heat a thin layer of oil in a skillet over medium heat. Cook muffin halves for 2–3 minutes per side, or until golden brown and crisp.
  • Dust with powdered sugar, drizzle with maple syrup, and garnish with fresh raspberries.
