Ingredients
- vegatable or canola oil for frying
- 1/2 cup milk
- 1/2 cup heavy cream
- 4 eggs
- 3 tbsp sugar
- 2 tsp vanilla
- 6 English muffins
- 1/2 tsp ground cinnamon (optional)
- zest of 1/2 orange (optional)
- powdered sugar
- pure maple syrup
- fresh raspberries (for garnish)
Instructions
- In a mixing bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla, and optional cinnamon and/or orange zest.
- Split the English muffins into halves and shake off any loose crumbs.
- Place the muffin halves in the custard, cut-side down. Soak for 2–3 minutes, flip, and soak another 2-3 minutes.
- Heat a thin layer of oil in a skillet over medium heat. Cook muffin halves for 2–3 minutes per side, or until golden brown and crisp.
- Dust with powdered sugar, drizzle with maple syrup, and garnish with fresh raspberries.
